DAD'S PASTA SAUCE

Normally for Christmas Mom's Sauce is a must. This year, however, in memory of my Dad I am sharing his pasta sauce that he wrote out for me once in his own hand. The recipe is very good and delicious topping for the Christmas ravioli. Ihave also included Mom's Meat Sauce below if this is a preferable recipe for your family.

Funny Note: my dad always claimed this was his original sauce reipe but his son-in-law, Bob, claims that he may have lifted it from a popular cookbook.

DAD"S MEAT SAUCE

IN a 4 quart stainless pot MIX:
2 cans 14.5 oz diced tomatoes
3 cans 6 oz. tomato paste
2 cans Cambell condensed soup
1 cup red wine

ADD to ABOVE MIXTURE:
1 LB lean ground beef  (chopped up and browned)
1 LB Italian prk sausage (chooped up and browned)

IN A SKILLET, SOFTEN THE FOLLOWING IN 1/4 CUP OF  OLIVE OIL:
2 cups diced onions
6 cloves garlic minced
2 ribs of celery minced
2 carrots minced

Once the vegetables are softening, ADD the following spices:
1/8 teaspoon crushed red pepper
1 tablespoon oregano
1 teaspoon all spice
4 tablespoons fresh basil or 1 tablespoon dry
1 teaspoon crushed dry rosemary or tablespoon fresh
MIX IN SPICES THEN ADD MIX TO THE BIG POT

Simmer, stirring occasionally, at least two hours. Fifteen minutes before the end of simmer add 1/2 teaspoon baking powder diluted in water.

OPTIONAL
SAUTE 12 oz fresh mushrooms in olive oil and add to asuace after simmer.
