Easy to prepare and light on calories, lunch bowls a quick fix for midday hunger. All you need is a bag of frozen riced cauliflower, or other riced vegetables (see below) a protein (egg, chicken, tuna, I like sardines too), a handful of greens (spinach, kale or whatever) and a fat (avocado slice or spray of olive oil). Layer all in bowl and microwave 2-3 minutes. Really easy!!!
If you want an even easier lunch, order a bowl with a riced cauliflower base from Chipotle BUT I find it hard not to add a side of guacamole chips! Please share your lunch bowl ideas at firstname.lastname@example.org.
