Robert Paul Reckers Goetta

Shared by my Houston, TX friend Melinda. This is her father-in-law's recipe who was born and raised in Covington, KY.

Bread Pan Goetta  (Robert Paul Reckers  1920 – 2012)     makes one loaf pan

 

* 1 ½ cup oat meal – soak at least 2 hours – drain – use strainer to change water

* About – 1 # pork and   About – 1 # Beef      Pressure cook or bake until well done   = 2 cups pork ground

= 2 cups beef ground

* ½ cup onions – Grind

* ½+ 3 cups liquid  - from meat

* 2 teaspoons salt

* ½  teaspoon pepper

Pressure Cooker -  15 pounds pressure   3 cups water

Cook meat for 15 minutes   Remove from heat

Let cool until pressure goes down

Crock pot

High until hot   After it is up to heat then low

Cook oatmeal about 1 – 2 hours

Grind meat, onions  -  Add to oats

Mix well and put into loaf pan.   Cool

I think my mom just followed the Pin Oats recipe on the bag(Alberta Marie Flerlage  2015-2010)

 

Goetta Recipe

1 lb beef

1 lb pork

ground together

8 cups water

2 ½ cups DORSELS’ Pinhead Oatmeal

1 large onion sliced

4 large bay leaves (optional)

3 teaspoons slat

a pinch of pepper

 

Regular Method

  1. Put water into pan, when boiling, add salt, pepper and oatmeal.
  2. Cook 2 hours, stirring often, keep lid on while cooking over low heat.
  3. Add meat, onion, and bay leaves, mix well
  4. Let cook 1 hour, stirring often
  5. Pour into bread pans. When cool, place in refrigerator.  Will keep for days.
  6. When ready to use, slice the loaf of goetta and put into a pan in which there is a little hot bacon fat. Fry until well browned.

 

Pressure Cooker Method

Use same ingredients as in above recipe with ONE EXCEPTION – 7 cups of water instead of 8 cups.

 

  1. Put water into pressure cooker (do not cover), when boiling add salt, pepper and oatmeal.
  2. Cook 5 minutes, stir a few times
  3. Add meat, onion and bay leaves, mix well
  4. Cover and cook 1 hour at 15 lbs. pressure.
  5. Set aside and allow indicator to return to normal
  6. Pour into bread pans. When cool, place in refrigerator. Proceed as in No. 6. above
