Homemade Sausage Making

Louisville cousin, Gina, writes in March ... "Here are the pics I took.  It was a really nice day being able to make sausage with my brother (David) and son (Garrett).  Doesn’t get much better than that!  That evening we had homemade pasta and lamb sauce curtesy of David, roasted vegetables and of course the sausage.  We made 20 # of the southern Italian and 10 # of the Northern.   I prefer the Southern as well, but they were both really good!" 

The photos Gina shared are posted below. This looks like an all-day project, and perhaps needs a piece of equipment. A little know how is likely a main ingredient in these recipes!
