TO GO OR NOT TO GO
Last week a big decision loomed. Should we take a long-planned mother-daughter trip or should the pandemic make the decision for us? There were pros and cons but in the final analysis we decided to go. The promise of enjoyment appeared high and the risk in the area we planned to travel remained low. Home again now, I am happy we made the decision and took the chance. My daughter, sister-in-law and niece have many warm, wonderful and delicious memories of a beach vacation untouched by the news of the moment. The day before we left the Grand Cayman’s government announced a total shut down starting today. We departed knowing our adventure would be a unique moment in time. SHELTER IN PLACE
Now decisions concerning our movements are slowly being made for us. Luckily we live in a democracy where we still have some control over our movements although we are all willing to follow the direction of a higher authority. We trust when there is an order to shelter in place that there are facts to support the directive. We have an obligation to follow the guidelines so our lives are on a temporary hold. Let’s take advantage, settle in and relax. What to eat now becomes a more looming daily decision. Cooking at home is a great idea, one that can be more leisurely and fun. Cleaning out the freezer can turn into a fortunate adventure. What a wonderful opportunity to create delicious memories with chicken!

ALL THAT CHICKEN
You know all that chicken you purchased on sale and froze? Well, it’s time to defrost it and make a batch of chicken cacciatore with polenta. This is what my brother, Mike, and his wife, Theresa, decided to do while they worked on a puzzle during this shut down. They were so gracious to share their delicious adventure with us. CLICK HERE to view their menu and photos. For dessert they enjoyed white wine with Mike’s famous chocolate, almond, blood orange biscotti (a recipe not currently available but I will ask for it). In a crockpot, Theresa married oregano, dried mushrooms and wine in her cacciatore, no doubt giving the original family recipe a deeper and richer taste sensation.

WHAT ARE YOU EATING?
Over the next few weeks, while many decisions about our movements will be dictated, you will be deciding what to eat? We are so fortunate to live in America where we have freezers and stocked pantries. Where despite all obstacles, our grocery store shelves will likely remain stocked. Our history also informs us that as Americans we have a great amount of ingenuity and tenacity to weather trying times.
