Celeriac Soup

SOOOO! My friend Ann comes over to visit and we have a post-pandemic soup party. She is all a-glow about Celeriac soup (see recipe right). What the heck is a CELERIAC? Simply it "is a root vegetable closely related to celery, parsley and parsnips. Its scientific name is Apium graveolens var. rapaceum, and it's also known as turnip-rooted celery, knob celery or celery root." According to Healthline, celeriac is a low-calorie carb packing great nutrition. Click button below for the low down on celeriac health benefits. We whip up the soup (see photos below) and enjoy a bowl with bacon & tomato sandwiches. Ann also brought a dessert (see recipe below) with a secret ingredient that Steve and I failed to guess but could taste. The next day for lunch I enjoy a bowl COLD which reminds me of a delicious Vichyssoise. Hot or cold it is sure worth the effort...peeling the damn thing is the hardest part! Ann gave me the peeling chore as she assembled the remaining ingredients.

As you can see, this is a very simple soup to make. In place of using my blender stick (that died when I attempted to use) we ended up whipping it in a blender. Ann believe the texture after a blender whip is much smoother and creamier than using a stick blend. So just a quick tip for a light and fluffy soup to enjoy with a sandwich.
